Gary Maclean’s Bramble, Cinnamon, Heather Honey and Roast Hazelnut Porridge

We hope this Perfect Porridge recipe from Gary Maclean inspires you to throw your own Porridge Party to help us feed more hungry children in school. 

Ingredients 

100g jumbo porridge oats

450ml milk

½ tsp cinnamon

50g heather honey

1 punnet of brambles (aka blackberries), cut in half

20g roasted chopped hazelnuts

Gary Maclean is a multi-award winning chef who won MasterChef: The Professionals in 2016 and is the current National Chef of Scotland.

Method

  1. In a medium-sized saucepan, mix the oats, cinnamon and milk.
  2. Bring to the boil, stirring occasionally.
  3. Once it has come to the boil reduce the heat and cook for 4-5 minutes, stirring all the time.
  4. Add half of your brambles and cook for a further 2 minutes until the fruit has broken down into the porridge. 
  5. Divide between 4 bowls, top with the remaining brambles, a spoonful of honey, the chopped hazelnuts and the remaining fruit.
